even more skinny recipes

This morning I tried a new recipe for Weight Watchers Belgian Waffles. Turned out quite tasty. Topped with strawberries. Yum. Very satisfying.

Last night I made Shrimp and Zucchini with Pasta in light tomato sauce. This is the second time I've made this dish. I love it. So delicious.

I used Diet Fiber Pasta (requires one minute longer cooking time than is written on the box, otherwise, quite delicious).

   

I tried this recipe last week, Shrimp Enchilada Casserole, but it didn't wow me. Probably had more to do with my having to substitute certain (almost all of the) ingredients than the recipe not being good. Besides this one, I have loved all the recipes of hers I have tried.

angel food cake

I bought some strawberries today, and was in the mood for some strawberries and angel food cake. I have never seen it here, so I attempted to make my own today. I have never tried this before...I think it turned out pretty nice looking. I, of course, don't have one of those flat angel food cake pans, so I used my rubbery fancy bundt cake pan. Not too bad, eh?



I haven't tried it yet. I am waiting until after dinner.

skinny turkey chili, loaded cauliflower, BBQ Chicken piadina pizza

Last night I made a delicious White Turkey Chili recipe from Laaloosh.com. I made a few revisions, because I didn't have everything on hand, but man, was this soup delicious.


Ingredients with my changes
  • 1lb extra lean ground turkey breast - used turkey breast 
  • 1 large white onion, finely chopped 
  • 4 cloves garlic, minced 
  • 1 28oz can tomatillos - used 2 cans red tomato puree 
  • 2 4oz can roasted green chilies - used green peppers 
  • 1 15oz can cannellini beans 
  • 2 cups fat free chicken stock 
  • 3 fresh jalapenos, seeded and diced - used jarred 
  • 1 cup part skim mozzarella, shredded 
  • 1/2 cup non-fat plain Greek yogurt - didn't add 
  • 1 tbsp cumin 
  • 1 tbsp coriander 
  • 1 tbsp oregano 
  • Salt and pepper to taste 
  • Cilantro and lime wedges for garnish (optional) - didn't have

Today we had it again, but I left off the cheese, and just grated some parmigiano reggiano on top. Seriously doesn't need all the add ons, it is so good as is!

The other night I made Loaded Cauliflower, from this site. It's a great recipe for those craving a stuffed baked potato. Here is her photo, I forgot to take one.


Ingredients with my changes
  • 1 cup cooked cauliflower 
  • 1 teaspoon butter - I skipped butter 
  • Salt and pepper, to taste 
  • 1 ounce cheddar cheese, shredded 
  • 1 tablespoon ranch dressing or sour cream - used sour cream 
  • 1 strip bacon, crumbled - skipped bacon 
  • 1 teaspoon chives 

The cauliflower with cheese was so good, the second time I ate it, I skipped all the extra ingredients. But, if you are really craving a loaded baked potato, this is for you!

 I made another skinny pizza, this time BBQ Chicken pizza.


Chicken, BBQ sauce, peppers, onions, and low fat mozzarella on a piadina. Yummy!

diet soda red velvet cupcakes

I decided to try a new recipe, diet soda cupcakes, since I just happened to have the ingredients on hand! I used Duncan Hines Red Velvet Cupcake mix but swapped out the eggs, oil and water with Coke Zero and egg whites.


They turned out SO delicious! I used the frosting that was included in the box, since I hate to waste things my mom sends me, but I ended up scraping it off after trying one. Way too sweet for me. The cupcakes came out so moist and delicious, the frosting just isn't necessary. Especially if you are watching what you eat. (I am storing them in the fridge, and the icing just popped right off.) I would recommend just sprinkling some powdered sugar over them, to make them pretty.

The next *diet* recipes I want to attempt will be diet soda brownies, and pumpkin muffins with these suggestions and low fat cream cheese frosting.
